  • 1 cup old-fashioned oats Hearty oats that create a chewy texture.
  • 1/2 cup chopped raw walnuts Brings richness and crunch.
  • 1/3 cup honey Natural sweetener reminiscent of baklava.
  • 3 Tbsp. coconut oil, melted Adds a subtle tropical twist.
  • 1 tsp. ground cinnamon Infuses warm aroma.
  • 1/2 tsp. kosher salt Balances sweetness.
  • 1 cup chopped roasted pistachios, divided Adds color and depth.

Instructions
 

Preparation

  • In a large bowl, combine the old-fashioned oats, chopped walnuts, honey, melted coconut oil, ground cinnamon, kosher salt, and 3/4 cup of the chopped pistachios. Stir together until well coated.
  • Line your air fryer basket with a piece of parchment paper, leaving some vent holes uncovered.

Cooking

  • Pour the oat mixture into the prepared air fryer basket, spreading it in a single layer.
  • Set the air fryer to 325°F and cook for about 15 to 18 minutes, stirring halfway through.
  • After cooking, stir in the remaining 1/4 cup of chopped pistachios.

Cooling & Storage

  • Allow the granola to cool in the air fryer for 15 to 20 minutes before breaking it into clusters.
  • Store in an airtight container, keeping fresh for up to two weeks.

Notes

For best results, do not overcrowd the basket and allow the granola to cool fully before breaking into clusters. You can also customize this granola with different nuts, using maple syrup for vegan options, or adding seeds and dried fruits.
