Preparation

  • In a large mixing bowl, combine the shredded chicken with buffalo sauce, cheese, and chopped green onions.
  • Take an egg roll wrapper and place about 2 tablespoons of the chicken filling in the center.
  • Fold the bottom corner of the wrapper over the filling to create an envelope shape. Tuck the sides in and roll tightly, using a bit of water to seal the edge.

Cooking

  • Preheat the air fryer to 375°F (190°C).
  • Lightly spray the egg rolls with cooking spray.
  • Carefully place the egg rolls in the air fryer basket in a single layer.
  • Air fry for 10-12 minutes, flipping halfway through until they are golden brown.
  • Serve warm with ranch or blue cheese dressing for dipping.

Notes

Ensure your chicken is well shredded for even flavor distribution. Avoid overfilling the egg rolls and preheat the air fryer properly for optimal texture. Leftover rotisserie chicken works great for this recipe.
