Instructions
 

Preparation

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the graham cracker crumbs, melted unsalted butter, and granulated sugar until blended. Press firmly into the bottom of a springform pan.
  • In a separate bowl, beat the softened cream cheese until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition. Then blend in the sour cream and vanilla extract.
  • In another bowl, toss the sliced apples with brown sugar and cinnamon until coated.
  • Layer half of the cheesecake filling over the crust, followed by half of the apple mixture. Repeat with remaining filling and apples.

Baking

  • Bake for 50-60 minutes, until the edges are set but the center remains slightly jiggly.
  • Allow the cheesecake to cool completely at room temperature, then refrigerate for at least four hours, ideally overnight.

Serving

  • Serve chilled, topped with whipped cream or an extra sprinkle of cinnamon.
