For cooking and serving

Instructions
 

Marination

  • In a bowl, whisk together the honey, olive oil, soy sauce, fresh lemon juice, minced garlic, grated ginger, paprika, black pepper, and red pepper flakes if using.
  • Pat the cod fillets dry and season them with salt before placing them in the marinade.
  • Turn the fillets to coat well and marinate for 30 minutes, allowing the flavors to meld beautifully.

Preparing Rice

  • Rinse the jasmine rice under cold water until it runs clear, helping to remove excess starch.
  • In a saucepan, combine the rinsed rice with chicken broth and a pinch of salt.
  • Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for 18 minutes.
  • When done, remove from heat and let it stand for 5 minutes. Fluff the rice with a fork and stir in a couple of tablespoons of butter for an extra touch of creaminess.

Cooking Cod

  • Preheat your conventional oven to 400°F (200°C).
  • In a large skillet, melt 2 tablespoons of butter over medium heat.
  • Carefully add the marinated cod fillets to the skillet, searing them for about 2-3 minutes on each side until they achieve a crispy golden exterior.
  • While searing, add the lemon slices into the skillet alongside the cod, letting them infuse their flavor.
  • After searing, transfer the skillet with the cod and lemon slices directly to the oven.
  • Bake for 10-12 minutes or until the cod flakes easily with a fork, keeping it moist and flavorful.

Plating

  • Once done, remove the skillet from the oven.
  • Serve the fluffy jasmine rice on plates and top each portion with the beautifully baked cod, drizzling any remaining pan sauce over the top.
  • Garnish with fresh parsley for a pop of color and an added layer of flavor.
