Ingredients
  

For the Stew

  • 1.5 pounds beef stew meat, cut into chunks Choose quality meat with good marbling for tenderness.

For the Mashed Topping

  • 4 medium potatoes, peeled and diced For the creamy mashed topping.

Instructions
 

Preparation

  • In a large pot over medium-high heat, add vegetable oil. Once hot, add the beef chunks, browning them on all sides until they have a lovely sear.
  • Remove the browned beef and set it aside. In the same pot, add the chopped onion and minced garlic. Cook until softened and aromatic.

Cooking

  • Return the beef to the pot and pour in the beef broth. Add the sliced carrots, diced potatoes, Worcestershire sauce, tomato paste, dried thyme, and salt and pepper.
  • Bring the mixture to a boil, reduce the heat, and let it simmer for 1.5 to 2 hours.
  • While the stew simmers, peel and dice the additional potatoes. Boil them until fork-tender, then drain.
  • In a bowl, mash the potatoes with butter, milk, salt, and pepper until creamy and smooth.
  • Stir in the peas to the simmering stew and transfer the stew to a baking dish. Top it with the creamy mashed potatoes. Broil in the oven until the top is golden and slightly crispy.

Serving

  • Allow the dish to cool slightly before serving. Dish out generous portions and enjoy!

Notes
