Ingredients
  

For the Filling

  • 3 lbs chuck roast Tender and juicy, becomes incredibly succulent when cooked.
  • ¼ cup El Jefe Adobo Honey Taco Seasoning Adds a sweet and spicy kick.
  • 5 units ancho chiles Mild, smoky flavor.
  • 3 units guajillo chiles Fruity and slightly tangy essence.
  • 2 units chiles de árbol Burst of heat.
  • 1 unit onion, rough chopped Adds steam, sweetness and richness.
  • 6 cloves garlic Aromatic and robust.
  • 2 cups water for steeping the chiles Vital for extracting bold flavors.
  • ¾ cup El Jefe Taco Sauce Adds zest to the filling.
  • 2 cups beef stock Intensifies richness.
  • ¾ cup Chihuahua cheese, shredded Melts beautifully.
  • 1 cup flour Forms crispy crust.
  • 3 units eggs, separated into yolks and whites Yolks enrich filling, whites for breading.
  • 2 cups breadcrumbs Creates crunchy exterior.
  • 1 ½ cups white rice Adds substance and texture.
  • 3 cups water for cooking rice Necessary for fluffy grains.
  • ½ packet Sazon H2 For vibrant flavor boost.

Instructions
 

Preparation

  • Toast the chiles in a sauté pan over medium heat until fragrant.
  • In a saucepan, combine toasted chiles, chopped onion, garlic, and water. Boil, then steep for 15-20 minutes.
  • Season the chuck roast with El Jefe Taco Seasoning and sear in a pressure cooker until golden.
  • Blend the steeped mixture until smooth, strain it back into the saucepan, and pour over the meat.
  • Add taco sauce and beef stock, cook on high pressure for 1 hour.
  • Once done, shred the meat and mix it back with the steeped liquid.
  • Cook rice with water and Sazon, then let cool.
  • Mix the shredded meat, cooled rice, cheese, and egg yolks for the filling.
  • Shape the mixture into balls, then bread them by coating in flour, dipping in egg whites, and rolling in breadcrumbs.
  • Fry in hot oil until golden brown.
  • Serve hot with consomé for dipping.

Notes

For the best results, allow the meat enough time to soak in flavors. Consider making the filling the day before. Adjust spice levels according to preferences.
