Ingredients
  

For the Oreo Crust

  • 3 packages cream cheese, at room temperature For a smooth and creamy texture.

  • 3/4 cup sour cream Balances the richness with a hint of tanginess.
  • 1/3 cup unsweetened cocoa powder Enhances the chocolate flavor.
  • 1 teaspoon pure vanilla extract Provides a warm, aromatic quality.
  • 3 large eggs Adds structure and creaminess to the filling.

For the Ganache Topping

  • 2/3 cup heavy cream For a luxurious ganache.
  • 6 ounces semi-sweet chocolate, chopped Creates a glossy ganache topping.

For Garnish

  • 1 cup cherry pie filling Adds a perfect tart contrast on top.

Instructions
 

Preparation of Crust

  • Crush the Oreo cookies finely and combine with melted butter until the mixture resembles wet sand.
  • Press the mixture firmly into the bottom of a springform pan.

Preparation of Filling

  • In a mixing bowl, beat the cream cheese until smooth and creamy.
  • Gradually mix in the granulated sugar until well combined.
  • Incorporate the sour cream, cocoa powder, and vanilla extract.
  • Add the eggs one at a time, mixing until the batter is smooth and creamy.

Baking the Cheesecake

  • Pour the cheesecake filling over the prepared Oreo crust in the springform pan.
  • Bake in a preheated oven at 325°F (160°C) for about 50-60 minutes, until the edges are set but the center is still slightly wobbly.

Ganache Topping Preparation

  • Melt the chopped semi-sweet chocolate with heavy cream in a saucepan over low heat, stirring continuously.
  • Allow it to cool slightly before using.

Finishing the Cheesecake

  • Once the cheesecake is done baking, let it cool gradually at room temperature.
  • Pour the ganache over the top of the cheesecake and refrigerate until fully set, ideally overnight.
  • Top with cherry pie filling just before serving.

Notes

Ensure cream cheese is at room temperature to avoid lumps. Allow cooling in the oven to prevent cracks.
