Instructions
 

Cooking the Chicken

  • In a skillet over medium heat, add olive oil. Season the chicken breasts with salt and pepper, ensuring each piece is well-coated. Sear each side for 5-7 minutes until nicely browned and cooked through.
  • Once the chicken is golden and fully cooked, pour the buffalo sauce over the top. Cover the skillet and let it simmer for another 5 minutes.
  • Carefully remove the chicken from the skillet and let it rest on a cutting board for a few minutes. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the skillet, allowing it to coat in the remaining buffalo sauce.

Preparing the Bowl

  • While the chicken is cooking, prepare your cooked brown rice according to package instructions. Once done, set it aside.
  • In a steamer, lightly steam the broccoli and carrots until bright and tender-crisp.
  • To assemble your Buffalo Chicken Bowls, start with a generous layer of brown rice at the bottom of each bowl. Layer on the steamed broccoli, carrots, and diced celery.
  • Top it off with the simmered buffalo chicken, then sprinkle blue cheese crumbles, add a dollop of creamy Greek yogurt, and garnish with freshly chopped parsley.

Notes

For best results, marinate chicken in buffalo sauce for at least an hour before cooking. Store leftovers in airtight containers in the refrigerator for up to 3 days.
