  • Heat olive oil in a large pot over medium heat and sauté diced onion and green bell pepper for about 5 minutes until they are soft.
  • Add minced garlic and sauté until fragrant, about 1 minute.
  • Stir in the chopped cabbage and cook for another 5 minutes until soft.
  • If using sausage, add the sliced pieces and allow them to brown slightly.
  • Mix in the rice, diced tomatoes (with their juice), vegetable broth, Cajun seasoning, smoked paprika, salt, and pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce heat, cover, and let simmer for about 25 minutes until the rice is tender.
  • Remove from heat, let sit for about 5 minutes, then fluff with a fork. Garnish with sliced green onions before serving.
