For the Shells

  • 8 pieces cannoli shells, either homemade or store-bought Crispy and light

For the Filling

  • 2 cups ricotta cheese Rich and creamy, well-drained for the best consistency
  • 1/2 cup confectioners' sugar Plus extra for dusting
  • 3/4 cup mini chocolate chips Divided; adds delightful bursts
  • 1 1/2 teaspoons pure vanilla extract Fragrant and aromatic
  • 2 teaspoons fresh orange zest Optional; enhances sweetness

Preparation

  • Place the ricotta cheese into a fine mesh strainer over a bowl and let it drain in the fridge for at least six hours or overnight.
  • In a large mixing bowl, combine the drained ricotta cheese, confectioners' sugar, 1/4 cup of mini chocolate chips, pure vanilla extract, and orange zest if using. Mix until creamy.

Filling the Shells

  • Transfer the creamy filling into a piping bag or use a spoon to fill the cannoli shells generously.
  • Dip each end of the filled cannoli into the remaining mini chocolate chips.
  • Dust each cannoli lightly with confectioners' sugar before serving.

Notes
