Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour three 8-inch round cake pans.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.

Mixing

  • In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Add eggs one at a time, beating well after each addition, and then stir in vanilla extract.
  • Mix in mashed bananas and sour cream until well combined.
  • Gradually add the dry ingredients, mixing until just incorporated to avoid overmixing.
  • Fold in chopped pecans carefully.
  • Divide the batter evenly among the prepared pans.

Baking

  • Bake for 25-30 minutes or until a toothpick comes out clean.
  • Let the cakes cool in pans for 10 minutes before transferring to a wire rack.

Assembly

  • Place the first cake layer on a serving plate and spread with caramel sauce.
  • Repeat with the second layer, adding caramel in between, and top with the third layer.
  • Drizzle with additional caramel sauce and garnish with banana slices and extra pecans.

Notes
