Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until fully combined.
  • Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  • Fold in the graham cracker crumbs.
  • In a separate bowl, beat together cream cheese, powdered sugar, and vanilla until smooth and creamy.
  • Take a tablespoon of cookie dough, flatten it slightly, and place a dollop of the cheesecake filling in the center.
  • Wrap the dough around the filling and seal it well.
  • Place the formed cookie balls on the baking sheet and flatten them slightly for even baking.
  • Bake for 10-12 minutes, or until the edges are golden brown and the centers remain soft.
  • Drizzle warm caramel sauce over the cookies after removing them from the oven and let them cool slightly before enjoying.
