Preparation

  • In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions along with a pinch of salt. Sauté, stirring occasionally.
  • Cook the onions for about 15-20 minutes until they become golden brown and tender.
  • Once your onions are caramelized, stir in the harissa paste and smoked paprika, mixing well.
  • Add the drained chickpeas to the skillet and stir gently to combine. Cook for another 5-7 minutes.
  • Finally, season with salt and pepper to taste.
  • Serve over rice, in wraps, or on their own, garnished with fresh herbs.

Notes

For better results, use a heavy-bottomed skillet and adjust spiciness of the harissa as per your taste. Can be served with couscous or quinoa, pitas, or a fresh salad.
