For the Cream Cheese Frosting

  • 4 oz cream cheese, room temperature Adds richness to the frosting.
  • ¼ cup granulated sugar Sweetens the cream cheese.
  • 1 large egg yolk Helps to thicken the frosting.
  • ¾ teaspoon vanilla extract Enhances the creaminess of the frosting.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  • In a microwave-safe bowl, melt the butter until completely liquefied and allow to cool slightly.
  • Combine the melted butter with packed brown sugar, then mix in the egg and vanilla extract.
  • Gradually incorporate all-purpose flour, ground cinnamon, baking powder, and salt into the mixture until just combined.
  • Fold in shredded carrots.

Frosting

  • In another bowl, beat room temperature cream cheese with granulated sugar until smooth.
  • Mix in egg yolk and additional vanilla extract.

Assembly and Baking

  • Spread half of the carrot cake batter evenly in the greased pan and dollop half of the cream cheese mixture over it.
  • Repeat with the remaining batter and cream cheese mixture.
  • Gently swirl batters together with a knife.
  • Bake for 35 to 40 minutes until golden brown and a toothpick comes out clean.
  • Allow to cool in the pan for at least 10 minutes before transferring to a wire rack.

Notes

For best results, ensure all ingredients are at room temperature, particularly cream cheese. Avoid overmixing for a lighter bar.
