Instructions
 

Prepare the Crepe Batter

  • Whisk together the flour, salt, and sugar in a mixing bowl. In another bowl, whisk together the milk and eggs until well combined.
  • Gradually pour the wet mixture into the dry ingredients, whisking until smooth.
  • Stir in the melted butter, cover the bowl, and let the batter rest in the refrigerator for 30 minutes.

Cook the Crepes

  • Heat a non-stick skillet over medium heat and lightly grease it.
  • Pour 1/4 cup of the crepe batter into the center of the pan, swirling to coat evenly.
  • Cook until the edges start to lift and the crepe is lightly browned on the bottom, about 1-2 minutes. Carefully flip and cook for another minute on the other side.
  • Transfer the crepe to a plate and repeat with the remaining batter.

Prepare the Cheese Filling

  • In a mixing bowl, combine the farmer cheese and softened cream cheese. Blend until smooth.
  • Add in the sugar, one egg, vanilla extract, and optional lemon zest, mixing until well incorporated.

Fill and Roll the Crepes

  • Take a prepared crepe and place a spoonful of the cheese filling in the center.
  • Fold the sides over the filling and roll the crepe tightly from one end to the other.
  • Repeat with all the crepes and filling.

Cook the Blintzes

  • In a skillet, melt a small amount of butter over medium heat.
  • Place the filled blintzes seam-side down and cook until golden brown on both sides, about 3-4 minutes per side.

Serve

  • Drizzle the Cheese Blintzes with melted butter and serve warm topped with sour cream, fruit preserves, and powdered sugar.
