Preparation

  • Preheat your oven to 325°F (160°C).
  • In a medium bowl, combine the graham cracker crumbs with ¼ cup granulated sugar. Stir in the melted butter until it resembles wet sand.
  • Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

Filling

  • In a large mixing bowl, beat the softened cream cheese with ½ cup granulated sugar until smooth.
  • Add the vanilla extract, eggs, lemon juice, and lemon zest. Mix until everything is blended into a luscious filling.

Baking

  • Pour the creamy filling over the prepared crust and spread it evenly.
  • Bake for approximately 45 minutes, until the edges are firm and the center is jiggly.

Cooling and Serving

  • Allow the cheesecake to cool for one hour at room temperature.
