For the Kofta

For the Garlic Yogurt Sauce

  • 1 cup plain yogurt forms the creamy base
  • 2 cloves garlic, minced enhances the flavor
  • 1 tablespoon lemon juice adds refreshing zing

  • 1 dash olive oil enriches creaminess

Instructions
 

Preparation

  • In a large mixing bowl, combine ground chicken, diced onion, pressed garlic, chopped parsley, and cilantro.
  • Sprinkle in ground cumin, coriander, paprika, kosher salt, black pepper, and cayenne pepper.
  • Pour in the lightly beaten egg and gently fold until just combined.
  • With wet hands, form the mixture into 12-14 oval patties, about 2 inches long.

Cooking

  • Heat olive oil in a skillet over medium-high heat until it shimmers.
  • Carefully add kofta to the pan, ensuring enough space for even cooking.
  • Cook for 4-5 minutes until golden brown, then turn and cook for another 3-4 minutes until internal temperature reaches 165°F (74°C).
  • Transfer kofta to a serving plate and let rest for 2 minutes.

Making Sauce

  • In a separate bowl, mix yogurt, minced garlic, lemon juice, salt, and olive oil.

Notes

Wet your hands while shaping kofta to avoid sticking. Avoid using lean chicken to prevent drying out.
