Instructions
 

Cooking

  • Heat the vegetable oil in a large skillet over medium-high heat. Add chopped onions, poblano chiles, and sweet potatoes, seasoning them with salt and pepper. Cook for about 5 minutes until softened.
  • Next, add the chorizo, breaking it up with a wooden spoon. Cook for another 3 to 5 minutes until it is fully cooked and aromatic.
  • Stir in the garlic, tomato paste, chili powder, and cumin. Allow the spices and aromatic ingredients to come together over the heat for about a minute.
  • Pour in the chicken broth and black beans, bringing the mixture to a simmer. Cover the skillet and reduce heat to medium-low, cooking for 10 minutes.
  • Uncover and let it simmer for an additional 10 minutes, keeping an eye on the sweet potatoes until they are tender.
  • Stir in cilantro and lime juice before serving.
  • Serve the chili in bowls and top with fried eggs, cornbread, shredded cheddar, creamy avocado, and dollops of sour cream as desired.

Notes

Taste as you go and adjust seasonings to your preference. Consider making a larger batch to freeze for later. Alternatively, use turkey or chicken chorizo for a healthier option.
