Main Ingredients

Instructions
 

Preparation

  • In a large bowl, whisk together olive oil, lime zest, lime juice, minced garlic, chopped cilantro, salt, and black pepper.
  • Add the flank steak to the marinade, ensuring every inch is fully coated. Let it marinate for at least 15 minutes, or up to 2 hours in the refrigerator for more intense flavor.
  • While the steak marinates, cook the white rice according to the package directions, optionally adding lime juice to the cooking water.

Cooking

  • Heat a skillet or grill pan over medium-high heat and cook the flank steak for about 4-5 minutes on each side, or until it reaches your desired level of doneness.
  • Once cooked, remove the steak from the heat and allow it to rest for 5 minutes before slicing against the grain.

Final Assembly

  • In a small saucepan, lightly warm the black beans and corn over low heat, adding a sprinkle of salt and pepper.
  • Slice the avocado just before serving, then layer the cooked rice as the base in bowls. Top with sliced steak, warm black beans, corn, sliced avocado, and drizzle with cilantro lime crema.

Notes

For a lighter version, substitute flank steak with grilled chicken breast or firm tofu. Consider using quinoa or brown rice for added fiber and nutrients. Be cautious not to overcook the rice to prevent it from becoming sticky.
