Soup Base

  • 2 carrots diced Sweet and colorful.

Preparation

  • In a large bowl, combine lean ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, and Italian seasoning. Mix gently but do not overwork the meat.
  • Roll the mixture into small meatballs, about an inch in diameter.

Cooking

  • In a large pot, heat a splash of olive oil over medium heat. Sauté diced onions, carrots, and celery for about 5-7 minutes until softened.
  • Add the can of diced tomatoes and vegetable broth. Bring to a gentle boil.
  • Drop the prepared meatballs into the broth, reduce the heat, and simmer uncovered for 25-30 minutes or until fully cooked.
  • Taste the soup and adjust seasoning with salt and pepper. Serve hot, garnished with parsley.

Notes

Pair with crusty bread or a simple salad. Store leftovers in airtight containers for up to three days.
