Ingredients

Dry Ingredients

  • 2.5 cups All-purpose flour The foundation of this cake, yielding a tender and fluffy structure.
  • 2.5 teaspoons Baking powder This ensures your cake rises beautifully and achieves that fluffy texture.
  • 0.5 teaspoon Salt Just a hint to balance the sweetness and enhance the flavors.

Wet Ingredients

  • 1 cup Unsalted butter, softened Providing a creamy richness that makes the cake incredibly moist.
  • 2 cups Granulated sugar This adds sweetness, creating a delightful flavor profile.
  • 4 large Egg whites Whipping up a light and airy texture that’s essential for a successful cake.
  • 1 tablespoon Vanilla extract Infusing the cake with a warm and comforting aroma.
  • 1 cup Whole milk Enhancing the cake's moisture and softness, for a satisfying bite.
  • Pink and blue food coloring To create the fun, colorful layers that mimic the look of cotton candy.
  • 0.5 teaspoon Cotton candy extract (optional) For an extra sweetness that takes the flavor up a notch.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans to prevent sticking.
  • In a bowl: Whisk together the all-purpose flour, baking powder, and salt until well combined.
  • In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
  • Add egg whites one at a time, mixing well after each addition, then stir in vanilla extract.
  • Alternately add dry ingredients and whole milk to the butter mixture, beginning and ending with the flour. Mix until just combined.
  • Divide the batter into two bowls. Add pink food coloring to one bowl and blue to the other, stirring until desired color intensity is achieved.
  • Pour the batters into prepared pans, alternating colors to create a marbled effect and swirl gently with a knife.

Baking

  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow cakes to cool in their pans for about 10 minutes before transferring to a cooling rack.
  • Once cool, frost with cotton candy-flavored frosting and top with cotton candy or colorful sprinkles.

Notes

Tips for success include using room temperature ingredients, avoiding overmixing, and testing for doneness with a toothpick.
