For the Orange Glaze

  • 1 cup confectioners’ sugar Sifted for a silky finish.
  • 1 tablespoon freshly squeezed orange juice For tangy, vibrant flavor.
  • 1 teaspoon orange zest Finely grated; amplifies orange notes.

Instructions
 

Preparation

  • Preheat your oven to 400°F (205°C) and line a muffin tin with paper liners.
  • In a large mixing bowl, sift together the flour, baking powder, salt, cinnamon, nutmeg, and cardamom.
  • In another bowl, beat together the butter, granulated sugar, brown sugar, and orange zest until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition.
  • In a separate bowl, whisk together the sour cream and orange juice until smooth.
  • Alternate adding the dry flour mixture and the sour cream mixture to the butter mixture, starting and ending with flour. Mix until just combined.
  • Gently fold in the cranberries.

Baking

  • Fill each muffin cup about 2/3 full and bake for 25-27 minutes or until golden brown.
  • For the glaze, mix the confectioners' sugar, orange juice, and orange zest until smooth.
  • After cooling slightly, drizzle the glaze over the muffins.

Notes

Ensure ingredients are room temperature for better mixing. Avoid overmixing to keep muffins fluffy.
