Preparation

  • Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions. Drain and set aside.
  • In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the shrimp, seasoning with salt, pepper, and optional red pepper flakes. Cook until the shrimp are pink and opaque, about 2-3 minutes per side. Remove from skillet and set aside.
  • In the same skillet, heat the remaining olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  • Pour in the chicken broth and heavy cream, bringing to a gentle simmer. Stir in the grated Parmesan cheese.
  • Add the spinach and let it wilt down for about 2-3 minutes.
  • Return the shrimp and cooked tortellini to the skillet and toss everything together until well combined and heated through, about 1-2 minutes.
  • Stir in the butter until melted and adjust seasoning if necessary. Garnish with parsley before serving.

Notes

Serve with a side salad or garlic bread for a complete meal. For a lighter version, consider using whole-grain tortellini or zucchini noodles.
