For the Chicken

  • 5 pieces chicken cutlets Tender and juicy.

For the Breading

For the Salad

Instructions
 

Preparation

  • In a mixing bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, black pepper, and a pinch of sea salt. Stir until smooth.
  • Take 4-5 tablespoons of the dressing and mix it with the chopped romaine lettuce. Set aside the remaining dressing for later use.
  • Lay the chicken cutlets on a cutting board. Pound them to an even thickness and season both sides with salt and pepper.

Breading

  • In three shallow bowls, prepare the breading station: in the first bowl, mix the flour with salt and smoked paprika; in the second bowl, whisk the eggs; in the third bowl, combine the panko crumbs, breadcrumbs, parsley, black pepper, sea salt, oregano, garlic powder, and Parmesan.
  • Heat oil in a frying pan over medium heat. Dredge each chicken cutlet in the flour mixture, dip it in the whisked egg, and then coat it in the breadcrumb mixture.

Cooking

  • Fry the breaded chicken cutlets in the hot oil until golden brown, approximately 4-5 minutes per side. Let them drain on a wire rack.

Assembly

  • Slice the baguettes lengthwise, spread reserved dressing on both sides, layer with fried chicken cutlets, top with Caesar salad mix, and sprinkle with extra Parmesan cheese. Close the sandwiches and serve immediately.

Notes

For a lighter take, consider baking the chicken instead of frying. You can also substitute full-fat mayonnaise with Greek yogurt for a healthier dressing. Variations can include adding avocado or tomato.
