Preparation

  • Bring 2 cups of low-sodium vegetable broth to a gentle simmer in a medium saucepan over medium heat.
  • Stir in 1 cup of pearled couscous. Cover the pot and cook uncovered for about 8 to 10 minutes.
  • In a large skillet, heat 1 tablespoon of extra virgin olive oil over medium heat.
  • Sauté the 2 cloves of minced garlic for about 30 seconds until aromatic.

Cooking

  • Add 1 cup of diced bell peppers and 1 cup of diced zucchini to the skillet, sautéing until softened but still crisp.
  • Drain any excess liquid from the couscous and combine it with the sautéed vegetables in the skillet.
  • Squeeze the juice of 1 lemon over the mixture, seasoning with salt and pepper to taste.
  • Heat through for an additional minute, then serve warm or at room temperature.
