  • Start by cooking the white rice according to the package instructions, keeping it warm.
  • In a mixing bowl, vigorously whisk the eggs until frothy and slightly pale.

Cooking

  • Heat the sesame oil in a non-stick pan over medium-low heat and pour in the whisked eggs.
  • Gently scramble the eggs, cooking until just set but still creamy.
  • Add the warm, cooked rice to the pan and mix gently with the eggs.
  • Drizzle the low-sodium soy sauce over the mixture and toss gently.

Notes

Use day-old rice for best texture. Don’t overcook the eggs. Customize with vegetables for extra nutrition.
