Instructions
 

Preparation

  • Beat the softened butter and cream cheese in a mixing bowl until smooth and creamy.
  • Add the granulated sugar, eggs, vanilla extract, and almond extract. Mix on medium speed until light and fluffy.
  • Gradually mix in the all-purpose flour, cornstarch, baking soda, and salt until a dough forms. Be mindful not to overmix.
  • Cover the dough with plastic wrap and refrigerate for at least 2 hours.

Baking

  • Preheat your oven to 350°F (175°C).
  • Roll the chilled dough into 1-inch balls and place them on a parchment-lined baking sheet.
  • Press each ball gently with a fork to create a crisscross pattern.
  • Sprinkle them with sanding sugar before baking.
  • Bake for 9 to 11 minutes. Allow to cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Notes

Chill the dough properly to avoid spreading. You can freeze the dough for up to three months and bake it later.
