Preparation

  • Begin by placing the pitted Medjool dates in a food processor. Blend them until they form a sticky paste.
  • Add your choice of mixed nuts to the processor and pulse until you achieve small chunks.
  • Incorporate the peanut butter, rolled oats, and chia seeds into the mixture. Blend until well-combined.
  • Roll tablespoon-sized portions of the mixture into small balls, about the size of a golf ball.
  • Place the balls on a parchment-lined tray and refrigerate for at least an hour.

Notes

Store in an airtight container in the fridge for freshness. Tweak the recipe by using other nut butters or adding extras like cacao nibs or dried fruit.
