Instructions
 

Preparation

  • Add the chicken, thinly sliced onions, and bell peppers into a 6-quart slow cooker.
  • Pour about two-thirds of the jar of salsa over the top and sprinkle in the salt. Gently stir to combine.

Cooking

  • Cover the slow cooker and set to high for 4 hours or low for 6 hours.
  • Once cooked, transfer the chicken to a cutting board and shred it with two forks.
  • Return the shredded chicken to the slow cooker, add the remaining salsa and lime juice, and stir to combine.
  • Taste and adjust seasoning if necessary.

Notes

Serve in tortillas or over rice. Top with avocado, cilantro, or sour cream. Avoid overcooking the chicken for best texture.
