Preparation

  • Season the chicken thighs with salt and pepper.
  • Heat 1 tablespoon of sesame oil in a large pot over medium heat. Cook the chicken thighs for 5-7 minutes on each side until browned and cooked through.
  • Remove the chicken and slice it.
  • In the same pot, add the remaining sesame oil, minced garlic, grated ginger, and sliced chili pepper. Sauté for about 2 minutes until fragrant.
  • Pour in the chicken broth and bring it to a simmer. Add soy sauce and chili paste, stirring for about 5 minutes.
  • Add the ramen noodles and cook per package instructions until al dente, typically 3-4 minutes.
  • Toss in the sliced chicken and baby spinach, stirring until the spinach wilts, about 1-2 minutes.
  • Serve in bowls, adding the soft-boiled egg on top if desired. Garnish with green onions and sesame seeds.
