Marinade Ingredients

  • 1/3 cup extra-virgin olive oil Provides a rich base for the marinade.
  • 1/4 cup reduced-sodium soy sauce Savory umami essence complements the beef.
  • 2 tablespoons fresh lime juice (or lemon juice) Adds zesty acidity to balance rich flavors.
  • 2 tablespoons packed light brown sugar Adds sweetness that enhances the flavor.
  • 2 pounds flank steak A lean cut that benefits from marinating.
  • to taste kosher salt Essential for seasoning.
  • to taste freshly ground black pepper Adds a hint of spice.

Instructions

Preparation

  • In a bowl, whisk together the extra-virgin olive oil, soy sauce, lime juice, and brown sugar until smooth and well combined.
  • Using a sharp knife, score the flank steak in a diamond pattern for better marinade penetration.
  • Generously season the scored flank steak with kosher salt and freshly ground black pepper.
  • Add the seasoned steak to the marinade and ensure it is completely coated. For best results, marinate for a minimum of 30 minutes, but aim for 8 hours.
  • After marinating, remove the flank steak and allow it to come to room temperature.
  • Preheat your grill or skillet over medium-high heat. Grill or sear the flank steak for about 4-6 minutes per side for medium-rare.
  • Let the steak rest for 5 minutes after cooking to retain juices before slicing thinly against the grain.

Notes

Serve with grilled vegetables, fresh salad, or creamy mashed potatoes. Perfect for barbecues or family dinners.
