Ingredients
  

For the pancakes

  • 3 large eggs, separated Delicate and fresh
  • 2 tablespoons granulated sugar Sweet and sparkling
  • 1/4 cup whole milk Creamy and rich
  • 1/2 cup all-purpose flour Finely milled for tenderness
  • 1 teaspoon baking powder For that perfect lift
  • 1/2 teaspoon vanilla extract Aromatic and warm

Instructions
 

Preparation

  • Separate egg whites and yolks into two bowls.
  • In the yolk bowl, whisk together the milk, vanilla extract, granulated sugar, flour, and baking powder until smooth.
  • In a separate bowl, beat the egg whites until soft peaks form.
  • Gradually add sugar to the egg whites and beat until stiff peaks develop.
  • Gently fold the whipped egg whites into the yolk mixture using a spatula.

Cooking

  • Heat a non-stick skillet over low heat and lightly grease it.
  • Pour 1/2 cup of batter for each pancake into the skillet.
  • Cover and cook for about 5 minutes.
  • Carefully flip the pancake and cook until both sides are golden brown and puffed up.
  • Serve immediately with desired toppings.

Notes

For a healthier twist, consider swapping whole milk for almond or oat milk. Use whole wheat flour or gluten-free blend as alternatives. Their fluffy texture makes them perfect for breakfast or dessert.
