Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs and vanilla extract, mixing well until fully combined.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Scoop the dough into small balls and place them on prepared baking sheets, spacing them 2 inches apart.
  • Bake for 10-12 minutes and let cool completely on a wire rack.

Filling Preparation

  • In a saucepan over medium heat, whisk together evaporated milk, brown sugar, melted butter, and egg yolks.
  • Cook, stirring constantly until thickened, about 8-10 minutes.
  • Remove from heat and stir in coconut, pecans, and vanilla extract.
