Ingredients

Dry Ingredients

  • 2 cups all-purpose flour provides a creamy base for these delightful muffins.
  • 1/2 cup granulated sugar adds just the right sweetness with a lovely crunch.
  • 1/2 cup packed brown sugar brings a rich depth and a hint of molasses flavor.
  • 1 teaspoon baking powder ensures a light and airy texture.
  • 1/2 teaspoon baking soda helps the muffins rise beautifully.
  • 1/4 teaspoon salt balances the sweetness and enhances flavors.
  • 1/2 teaspoon ground cinnamon infuses warm, spicy notes.
  • 1/2 teaspoon ground nutmeg adds a slightly sweet, nutty aroma.

Wet Ingredients

  • 1/2 cup unsalted butter, melted and cooled gives a rich, buttery flavor.
  • 1 cup buttermilk adds tenderness and moisture to the muffins.
  • 2 large eggs binders that add richness and structure.
  • 1 teaspoon vanilla extract makes the muffins smell incredible while baking.

Add-ins

  • 2 cups peeled, cored, and diced apples (Granny Smith recommended) provides a tart and juicy bite.
  • 1 cup chopped pecans adds a delightful crunch and nutty flavor.
  • 1/2 cup caramel sauce (store-bought or homemade) for that gooey, indulgent finish.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fold in the diced apples and chopped pecans gently.
  • Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Baking

  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the muffins from the oven and let them cool in the tin for 5 minutes.
  • Transfer to a wire rack to cool completely. Drizzle with caramel sauce before serving.

Notes

For best results, measure flour accurately to prevent dense muffins. Don’t overmix the batter to maintain lightness.
