Ingredients
  

Burrito Ingredients

  • 4 large flour tortillas Burrito-size, soft and pliable.
  • 2 cups cooked rice Tender and fluffy.
  • 1 can black beans 15 oz, drained and rinsed.
  • 2 cups shredded cheese Mexican blend or cheddar.
  • 1 cup cooked protein Choose from ground beef, chicken, or carnitas.
  • 1/2 cup salsa or pico de gallo Fresh and zesty.
  • 1/4 cup sour cream Creamy and refreshing.
  • 2 tbsp taco seasoning For flavor.
  • 1 diced jalapeño Optional, for heat.
  • 1/4 cup diced onion Enhances flavor.
  • 2 cloves garlic Minced.
  • 1 bunch fresh cilantro Chopped.
  • to taste butter or olive oil For frying.
  • extra cheese for the outside For extra cheesy crunch.
  • optional corn, tomatoes, avocado, hot sauce, pickled jalapeños, lettuce Get creative with fillings.

Instructions
 

Preparation

  • Warm cold rice in the microwave with a splash of water and season with half the taco seasoning.
  • In a mixing bowl, combine the seasoned rice, black beans, cooked protein, salsa, and remaining taco seasoning. Taste and adjust seasoning.
  • Lay flour tortillas flat and place one-quarter of the filling in the center of each.
  • Add a dollop of sour cream, sprinkle on shredded cheese, and add diced jalapeños if using.
  • Wrap the tortillas by folding the sides over the filling and then rolling tightly from the bottom up.

Cooking

  • Heat a skillet over medium heat and brush with oil or butter.
  • Sprinkle shredded cheese onto the skillet and place the burrito seam-side down on top of the melted cheese.
  • Cook the burrito for 3-4 minutes until the bottom is golden brown.
  • Flip and repeat on the other side.
  • Allow the burrito to rest for 2-3 minutes before slicing diagonally.

Notes

Make sure to warm your tortillas before filling them to prevent tearing. Don’t overload the burrito with filling; a quarter of the filling works best. Use a non-stick skillet for easier cooking and cleanup. Allow the burrito to rest after cooking to keep filling from spilling out.
