Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  • In a separate bowl, whisk together the vegetable oil and eggs until smooth.
  • Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  • Fold in the grated carrots, crushed pineapple, vanilla, and walnuts if using.
  • Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.

Baking

  • Bake for 30–35 minutes, or until a toothpick comes out clean when inserted into the center.
  • Let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.

Finishing

  • Once fully cooled, frost with a generous layer of creamy cream cheese frosting before serving.
