For the cake

For the frosting

  • 1 package (8 oz) cream cheese (softened) Velvety and rich for a decadent frosting
  • 1 teaspoon vanilla extract For frosting, adding a fragrant note
  • 1 1/2 cups confectioners' sugar Giving the frosting its delightful sweetness

Optional toppings

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large bowl, mix together flour, sugar, baking soda, and salt.
  • Beat in eggs and vanilla extract until well combined.
  • Stir in the crushed pineapple, juices and all, until just mixed.
  • Pour the batter into the prepared baking dish and smooth the top.

Baking

  • Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.

Frosting

  • While the cake cools, prepare the frosting by beating together softened butter and cream cheese with vanilla extract until smooth.
  • Gradually add confectioners' sugar and mix until creamy.

Serving

  • Once the cake has cooled slightly, spread the frosting evenly over the top.
  • Sprinkle with coconut flakes and nuts if desired, then slice, serve, and enjoy!

Notes

For best results, use room temperature ingredients and avoid overmixing the batter. You can make the cake a day in advance and serve it at room temperature or chilled.
