Preparation

  • Heat the olive oil in a large pot over medium-high heat. Add the beef and sear until browned on all sides.
  • Add the onion, carrots, celery, and garlic to the pot. Sauté for about 5 minutes until softened.
  • Pour in the beef broth, thyme, and bay leaf. Bring the mixture to a gentle boil.
  • Stir in the pearl barley, reduce the heat to low, and let it simmer for about 45 minutes until the barley is tender.
  • Remove the bay leaf, and season with salt and pepper to taste before serving.

Notes

For best results, use a heavy-bottom pot and brown the beef thoroughly. Optionally garnish with fresh herbs like parsley or chives.
