For the marinade

For the chicken and vegetables

  • 8 pieces bone-in, skin-on chicken thighs Juicy and tender.
  • 1/2 tsp black pepper Adds a subtle kick.
  • 1 lb baby potatoes, halved Soaks up drippings.
  • 1 large red onion, cut into wedges Adds depth of flavor.
  • 1 large zucchini, sliced into half-moons Brings a fresh crunch.
  • 8 oz cherry tomatoes Lends bright freshness.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a small bowl, mix together the harissa paste, chopped cilantro, mint, parsley, minced garlic, olive oil, lemon juice, honey, and salt until well combined.
  • Pat the chicken thighs dry with a paper towel and season with salt and pepper. Rub half of the harissa mixture all over the chicken.
  • Toss the halved baby potatoes, red onion, zucchini, bell pepper, and cherry tomatoes in a large bowl with olive oil, salt, and pepper.

Cooking

  • Spread the vegetables in a single layer on a large sheet pan.
  • Nestle the marinated chicken among the vegetables, dolloping the remaining harissa mixture on top.
  • Roast in the preheated oven for about 35-40 minutes, until the chicken is golden brown and fully cooked through.
  • Let it rest for about 5 minutes before serving.

Notes

For best results, marinate the chicken in the harissa and herbs for a few hours or overnight. Serve with couscous or a fresh salad.
