  • 2 tablespoons vegetable oil For sautéing the chicken.
  • 1 large onion, sliced Sweet and aromatic.
  • 2 medium carrots, peeled and sliced Adds color and taste.
  • 1 medium zucchini, sliced into half-moons Absorbs flavors well.
  • 2 cups cooked white rice, preferably day-old Ideal for stir-frying.
  • 3 tablespoons soy sauce Provides deep umami flavor.
  • 2 tablespoons butter Adds richness.
  • 2 large eggs, lightly beaten Adds richness and heartiness.
  • 1 tablespoon sesame seeds, toasted For garnish.
  • 2 large green onions, chopped For garnish.
  • to taste extra soy sauce and sesame oil for serving Optional for flavor boost.

Instructions
 

Preparation

  • Cut the chicken into bite-sized pieces and season with salt and pepper.
  • In a large skillet or wok, heat vegetable oil over medium-high heat. Add seasoned chicken and cook for 5-7 minutes until golden-brown and cooked through. Remove and set aside.

Cooking Vegetables

  • In the same skillet, add sliced onion, carrot, and zucchini; stir-fry for 3-4 minutes until tender but still crunchy.
  • Spread the cooked rice evenly in the skillet and let sit for a minute to form a crispy texture.
  • Drizzle soy sauce over the rice and mix.
  • Create a space in the center, add butter, and let melt. Pour in the beaten eggs and scramble until just set.

Combining Ingredients

  • Fold scrambled eggs into the rice and vegetables, then add the cooked chicken and stir until everything is heated through.
  • Finish with sesame seeds and chopped green onions on top. Serve immediately with extra soy sauce and sesame oil.

Notes

Use day-old rice for better results. Avoid overcrowding the skillet for optimal frying. Consider adding more veggies for variations.
