Preparation

  • Boil the potatoes in salted water until fork-tender, approximately 20-30 minutes. Drain and cool slightly.
  • Peel and mash the cooled potatoes in a large bowl until smooth, ensuring a creamy texture.
  • In the bowl with the mashed potatoes, add the egg and a pinch of salt. Mix until fully integrated.
  • Sprinkle in the flour, half a cup at a time, stirring gently until a soft, non-sticky dough forms.
  • Dust a surface with flour and knead the dough gently for 1-2 minutes to maintain a light texture.
  • Divide the dough into sections and roll each into a rope about 1/2 inch thick. Cut into 1-inch pieces.
  • Create ridges on the gnocchi by pressing each piece lightly with a fork.
  • Boil a pot of salted water and cook the gnocchi until they float, approximately 2-4 minutes. Drain carefully.

Notes

Serve with butter and sage, marinara, or creamy Alfredo. Add fresh herbs or cheese for extra flavor. Common mistakes include using the wrong type of potatoes or over-kneading the dough.
