Preparation

  • In a mixing bowl, combine the diced peaches and 1/4 cup of sugar. Allow them to sit for about 10 minutes to macerate.
  • Transfer the macerated peaches to a blender and puree until smooth, reserving some chunks for texture.
  • In another bowl, whisk together the heavy cream, whole milk, the remaining sugar, vanilla extract, lemon juice, and salt until sugar is fully dissolved.

Churning and Freezing

  • Gently fold in the peach puree and reserved peach chunks into the cream mixture.
  • Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions, usually for about 20-25 minutes.
  • After churning, transfer the ice cream to an airtight container and freeze for at least 4 hours.

Serving

  • Scoop the ice cream into bowls and enjoy, drizzling with extra peach puree if desired.

Notes

For best results, use ripe, juicy peaches, and don't skip the freeze time after churning to achieve the perfect consistency. Feel free to serve with garnishes like fresh mint or crushed nuts.
