  • 4 medium Russet potatoes (about 1.5 lbs) These potatoes are creamy and fluffy when cooked.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the Russet potatoes. Cut them into sticks about ¼ inch thick.
  • Soak the potato sticks in cold water for at least 30 minutes.
  • Drain the potato sticks and dry them thoroughly using a kitchen towel.

Cooking

  • In a large bowl, toss the dried potato sticks with olive oil, minced garlic, kosher salt, and black pepper.
  • Spread the seasoned potato sticks onto a lined baking sheet in a single layer.
  • Bake for 25-30 minutes or until golden brown and crispy.
  • Once done, sprinkle freshly grated parmesan cheese over the hot fries.
  • Optionally, add chopped parsley for garnish.

Notes

For crispier fries, soak potatoes for at least 30 minutes, dry thoroughly, and avoid overcrowding the baking sheet. Experiment with seasoning variations or try baked sweet potatoes for a healthy twist.
