For the Grits

  • 1 cup stone-ground grits Offering a creamy, rich texture.
  • 4 cups low-sodium chicken broth Adds depth to the grits.
  • 1/2 cup heavy cream Creates a luxuriously smooth finish.
  • 4 tbsp unsalted butter For richness and velvety texture.
  • Salt and pepper To taste for seasoning.

Instructions
 

Preparation

  • In a medium pot, pour the low-sodium chicken broth and bring it to a boil.
  • Gradually whisk in the stone-ground grits, stirring continuously to prevent lumps from forming.
  • Lower the heat, cover the pot partially, and let the grits cook for 20-25 minutes, stirring occasionally.
  • Once the grits are tender, stir in the heavy cream and 4 tablespoons of unsalted butter. Season with salt and pepper, and keep warm.

Cooking the Shrimp

  • While the grits cook, melt 2 tablespoons of butter in a separate skillet over medium heat. Sauté the minced garlic for 1 minute until fragrant but not browned.
  • Add the seasoned shrimp to the skillet, cooking for 3-4 minutes until they turn pink and opaque.

Serving

  • Serve the creamy grits in a large bowl, topped with the sautéed shrimp and garnished with chopped green onions.

Notes

Use stone-ground grits for the best texture. Keep stirring the grits occasionally to prevent sticking, and avoid overcooking the shrimp.
