For the Gravy

  • 2 tbsp olive oil For searing the patties.
  • 2 tbsp butter Adds richness.
  • 1 large onion, sliced thin For sweet onion gravy.
  • 8 oz cremini mushrooms, sliced Earthy addition.
  • 2 cloves garlic, minced Second helping of flavor.
  • 3 tbsp all-purpose flour For thickening the gravy.
  • 2 cups beef broth Flavorful sauce base.
  • 1 tbsp Worcestershire sauce Enhances savory flavor.
  • 1 tsp fresh thyme (or 1/2 tsp dried) Herbal notes.
  • 1/2 tsp salt Additional seasoning.
  • 1/4 tsp black pepper Extra taste.
  • 2 tbsp heavy cream (optional but recommended) For a creamy finish.

Instructions
 

Preparation

  • Combine the panko breadcrumbs with the whole milk in a mixing bowl and let sit for about 5 minutes.
  • Add ground beef, beaten egg, Worcestershire sauce, Dijon mustard, grated onion, minced garlic, salt, black pepper, and smoked paprika to the soaked breadcrumbs.
  • Mix gently and shape into 4-6 patties.

Cooking

  • Heat olive oil in a skillet over medium-high heat.
  • Cook the patties for about 4-5 minutes on each side until browned.
  • Transfer the patties to a plate, cover to keep warm.

Making the Gravy

  • In the same skillet, melt butter and sauté sliced onions until translucent.
  • Add sliced mushrooms and cook until they release moisture.
  • Stir in minced garlic and cook for another minute.

Thickening the Gravy

  • Sprinkle flour over sautéed vegetables and stir for about 2 minutes.
  • Gradually whisk in beef broth, Worcestershire sauce, thyme, salt, and pepper.
  • Let simmer until gravy thickens.

Simmering the Patties

  • Return patties to the skillet and cover with gravy.
  • Simmer for about 8-10 minutes; optionally stir in heavy cream.

Serving

  • Plate the patties and ladle the gravy on top.
  • Garnish with parsley and serve with mashed potatoes and veggies.

Notes

Do not overmix the meat. Sear the patties properly for a crust. Monitor gravy thickness while whisking.
