  • 1 cup powdered sugar for glaze

Preparation

  • Preheat your oven to 350°F (175°C) and grease two round 9-inch cake pans.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Incorporate the eggs one at a time, then add the lemon zest, lemon juice, and ground lavender.
  • Gradually add the flour mixture and buttermilk alternately until just combined.
  • Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack.

Glazing and Serving

  • Prepare the glaze by mixing powdered sugar and lavender-infused water until smooth.
  • Layer the cooled cakes with glaze in between, then pour the glaze generously over the top.
  • Garnish with additional lemon zest and dried lavender before serving.

Notes

For best results, ensure ingredients are at room temperature. Grease and flour pans to prevent sticking and allow for proper cooling.
