  • 3 scoops PlantFusion vanilla bean protein powder (90g)
  • ½ cup old-fashioned rolled oats (50g)
  • 1 tablespoon poppy seeds (9g)
  • ½ tablespoon Truvia sweetener (7g)
  • 1 teaspoon fresh lemon zest (from 1 medium lemon)
  • 6 tablespoons fresh lemon juice (90mL, from 2 medium lemons)
  • 6 tablespoons water (90mL)

Preparation

  • In a large mixing bowl, combine the protein powder, rolled oats, poppy seeds, and Truvia. Mix the dry ingredients well using a whisk.
  • In a separate bowl, whisk together the fresh lemon juice and water until completely combined.
  • Add the fresh lemon zest to the dry mixture before carefully pouring in the liquid mixture. Stir with a wooden spoon until a cohesive dough begins to form.
  • Allow the mixture to sit for about 5 minutes to let the oats absorb moisture.
  • Roll the mixture into 12-15 small balls, each about 1 inch in diameter. Wet your hands slightly to prevent sticking.
  • Line a plate with parchment paper and place the energy bites on it. Refrigerate for at least 30 minutes.

Serving

  • After chilling, store the energy bites in an airtight container in the refrigerator for up to one week.

Notes

Use fresh lemon juice for best flavor. Adjust the amount of Truvia for desired sweetness.
