For the raspberry layer

  • 1 tablespoon cornstarch mixed with 2 tablespoons of water Thickens the raspberry compote.

Instructions
 

Preparation

  • In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until it resembles wet sand.
  • Firmly press the crumb mixture into the bottom and sides of a pie dish. Refrigerate for 30 minutes to set.

Lemon Layer

  • Blend softened cream cheese, lemon curd, powdered sugar, and lemon zest until smooth and creamy. Spread half over the chilled crust.

Raspberry Layer

  • In a saucepan, combine fresh raspberries, granulated sugar, and water over medium heat until the raspberries break down.
  • Mix cornstarch with water to create a slurry, then add to the raspberry mixture, stirring until thickened, about 2-3 minutes. Allow it to cool slightly.
  • Pour the raspberry compote layer over the lemon cream cheese layer, smoothing it out.
  • Use the remaining lemon cream cheese mixture for a final layer over the raspberry compote.

Chilling

  • Refrigerate the pie for at least 4 hours to fully set.

Serving

  • Top with whipped cream and garnish with fresh raspberries before serving.

Notes

Chill overnight for improved presentation and texture. Use Greek yogurt for a lighter alternative.
