Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them.
  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
  • In a separate bowl, combine the granulated sugar, eggs, vegetable oil, Greek yogurt, lemon zest, lemon juice, and vanilla extract. Beat until smooth and creamy.
  • Gradually add the dry ingredients to the wet mixture, gently folding in the grated zucchini at the end.

Baking

  • Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Frosting

  • In a medium bowl, mix the softened cream cheese and butter until fluffy. Gradually add the powdered sugar, vanilla extract, and lemon zest until smooth and creamy.

Assembly

  • When the cakes have cooled, place one layer on a serving plate and spread a generous amount of frosting over the top.
  • Stack the second layer on top and frost the entire cake with the remaining cream cheese frosting.
