Preparation

  • Wash and chop the zucchini and bell pepper into bite-sized pieces. Dice the onion and mince the garlic to prepare for cooking.

Cooking

  • Heat the olive oil in a large skillet over medium heat. Once hot, add the ground turkey, breaking it up with a spoon. Cook until browned, seasoning with salt and pepper.
  • Push the turkey to one side of the skillet and add the diced onion and chopped bell pepper. Sauté for 3-4 minutes until vegetables are tender-crisp, then stir in garlic and Italian seasoning, cooking for an additional 30 seconds.
  • Add chopped zucchini to the skillet. Stir everything together and cook for 5-7 minutes until zucchini is fork-tender.
  • Adjust seasoning to taste, adding more salt, pepper, or crushed red pepper flakes if desired. Serve hot, garnished with fresh herbs if available.

Notes

Use a non-stick skillet to prevent sticking with the ground turkey. Don’t overcrowd the skillet for better browning. Optionally, sprinkle fresh herbs on top before serving.
